When Jimbo and I were first married, one of our stomping grounds was an Italian restaurant not too far from our home. I’ve never been a big pasta person, but this place made a fabulous pasta fagioli. The white beans, pasta, and tomato were delicious! Because I love the challenge of re-creating great-tasting food from restaurants, I was inspired to duplicate this soup at home. I am happy to say that I was successful! Over the years, it has deliciously mutated to this recipe. It reminds me of my Soul Soup but with an Italian flair. Make some garlic bread to dip into this soup, and you just might feel like you are in Italia!
1 onion, diced
1 teaspoon to 1 tablespoon olive oil
3 cups water
1/2 teaspoon sea salt
2 tablespoons tomato paste
3 to 4 medium carrots, sliced into 1/2-inch rounds
3 cups cabbage, shredded
Fresh basil, sliced down the center and then thinly sliced (dried works well, too)
1 to 2 garlic cloves, minced
2 to 3 cups cooked great northern beans (See cooking instructions.)
Okay, you guessed it: sauté the onion in the olive oil. When the onions are translucent, add the water, salt, and tomato paste to the pot. Bring the contents to a boil, and then add the carrots. Simmer a few minutes, and then add the cabbage. When the carrots are just about tender, add the fresh basil and garlic. Add the cooked great northern beans and mix thoroughly. Adjust the salt and herbs at this time. Next, scoop some into a bowl and savor! Buon appetito!
